Then there’s the second kind. The kind where nobody’s trying to impress you with anything except what’s in the glass. Where the owner knows your name, the regulars become your friends, and every visit feels less like a tourist attraction and more like dropping by a neighbor’s house — if that neighbor happened to make genuinely exceptional wine.

You won’t find elaborate decorations or a carefully curated aesthetic here. What you will find is a warm, unpretentious tasting room with a beautiful wooden bar, wine barrels lining both sides of the room, and tables scattered through the center where conversations flow as freely as the wine. It’s the kind of place where you sit down next to a stranger and leave with a new friend.

The focus here is singular and refreshing: the wine. Patrick has built a space where the product speaks for itself, and frankly, it doesn’t need anything else to do the talking. In a wine scene increasingly dominated by elaborate experiences and Instagram moments, Cavaletti is a reminder that the best tasting rooms are really just about what’s in the glass.

Ask him about a particular vintage and you’ll get the honest story behind it. Ask about his winemaking philosophy and he’ll tell you exactly what he was going for and whether he thinks he got there. It’s refreshing in an industry that can sometimes take itself a little too seriously.

Over our many visits, we’ve learned a tremendous amount about wine just from conversations with Patrick at the bar. He has a way of explaining the winemaking process that makes it accessible without dumbing it down — whether you’ve been drinking wine for decades or just discovered you actually like it.

What I love most about Dark Heart is how drinkable it is without sacrificing complexity. The Zinfandel base gives it that bright, jammy fruit character that makes it immediately approachable, but the Mourvèdre and Petite Sirah add enough depth and structure to keep things interesting. The light tartness is the secret weapon — it makes the wine work with food in a way that sweeter blends can’t quite pull off.

We’ve paired Dark Heart with everything from a classic pasta night to weekend barbecues, and it’s never put a foot wrong. It’s also excellent on its own — which is the true test of a well-made blend.

The regulars at Cavaletti are welcoming, knowledgeable, and genuinely fun. We’ve had conversations about wine, travel, food, and everything in between at that wooden bar. If you go alone or as a couple with no agenda, don’t be surprised if you stay two hours longer than you planned — absorbed in conversation with people who felt like strangers for about five minutes.
